Who doesn't love a dip and chip moment? Especially when it's this fall Roasted Corn Dip & Popchips! 😋
What You'll Need:
- 5 ears of corn, peeled & trimmed
- Butter, softened
- Salt & Pepper
- 4 Scallions, chopped
- 1 avocado, diced
- 1 orange bell pepper, diced
- 2 cups cherry tomato, halved
For the dressing:
- 2 tbsp lime juice
- 2 tbsp olive oil
- 1 tbsp honey
- A dash of paprika, pepper, garlic powder, and salt (to taste)
Instructions:
- Preheat oven to 400°F.
- Spread each corn cob with softened butter & sprinkle salt & pepper to taste.
- Wrap each corn cob in foil and place on baking sheet.
- Roast in preheated oven for 10 minutes.
- Turn corn over and roast an additional 10-15 minutes until done and let cool.
- Meanwhile, prepare the dressing.
- Once corn has cooled, shave the corn kernels off the cobs.
- In a large bowl, add all of the vegetables and roasted corn.
- Top with the prepared dressing & stir to combine.
- Dig in with your favorite flavor of Popchips (we recommend Sea Salt!)
