Roasted Corn Salsa

Who doesn't love a dip and chip moment? Especially when it's this fall Roasted Corn Dip & Popchips! 😋

What You'll Need:

  • 5 ears of corn, peeled & trimmed
  • Butter, softened
  • Salt & Pepper
  • 4 Scallions, chopped
  • 1 avocado, diced
  • 1 orange bell pepper, diced
  • 2 cups cherry tomato, halved

For the dressing:

  • 2 tbsp lime juice
  • 2 tbsp olive oil
  • 1 tbsp honey
  • A dash of paprika, pepper, garlic powder, and salt (to taste)


  1. Preheat oven to 400°F.
  2. Spread each corn cob with softened butter & sprinkle salt & pepper to taste.
  3. Wrap each corn cob in foil and place on baking sheet.
  4. Roast in preheated oven for 10 minutes.
  5. Turn corn over and roast an additional 10-15 minutes until done and let cool.
  6. Meanwhile, prepare the dressing.
  7. Once corn has cooled, shave the corn kernels off the cobs.
  8. In a large bowl, add all of the vegetables and roasted corn.
  9. Top with the prepared dressing & stir to combine.
  10. Dig in with your favorite flavor of Popchips (we recommend Sea Salt!)
